Darwin Airport Resorts’ Signature Poolhouse Bar & Kitchen Officially Opened by NT Minister for Tourism and Hospitality
Darwin Airport Resorts, proudly owned by Airport Development Group (ADG), has celebrated the official opening of its newest hospitality destination, the Poolhouse Bar & Kitchen, officially unveiled by Minister for Tourism and Hospitality, the Hon. Marie-Clare Boothby MLA.
Bringing a fresh new dining experience to Darwin, the Poolhouse Bar & Kitchen blends Californian boho style with Top End character. The venue accommodates up to 170 guests across indoor and outdoor spaces overlooking the lagoon pool, children’s playground, and landscaped beer gardens — all framed by stunning murals from local artists.
Under the leadership of Head Chef Laurence “Loulou” Lochouarn, a French-born culinary talent with Michelin-starred experience, the menu celebrates Territory flavours infused with global inspiration. A curated beverage list features Darwin craft beers, tropical cocktails, and wines selected to suit the Northern Territory climate.
The Poolhouse Bar & Kitchen also reflects ADG’s commitment to workforce development and Indigenous participation, with graduates and trainees from the ADG Indigenous Academy gaining valuable hospitality experience both front and back of house.
Minister for Tourism and Hospitality, the Hon. Marie-Clare Boothby MLA, said: “It’s a privilege to officially open the Poolhouse Bar & Kitchen, a fantastic investment that shows confidence in Darwin and in the Territory’s future. Under our Government, we’re seeing businesses back themselves to expand and innovate, and that creates jobs and opportunities for locals.”
